Chef John's Maple Pistachio Sweet Potato Casserole
Ingredients
  • 2 1/2 pounds sweet potatoes, peeled and cubed
  • salt
  • 2 tablespoons butter
  • 2 large eggs
  • 1/4 cup maple syrup
  • 1/4 cup buttermilk
  • 1/3 cup milk
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1 pinch ground allspice
  • 1 pinch cayenne pepper
  • 1/2 cup chopped roasted, salted pistachios
  • 1/2 cup light brown sugar
  • 1/3 cup all-purpose flour
  • 1/4 cup butter, melted
Instructions
1
Begin by preheating your oven to a high temperature of 350 degrees Fahrenheit, or 175 degrees Celsius.
2
Next, take a 2 1/2-quart baking dish and grease it generously with butter to prevent sticking.
3
Place the sweet potato cubes into a large pot, cover them with water, and add just enough salt to bring out their natural flavor. Bring the mixture to a boil and cook until it becomes tender, about 10 minutes. Drain off any excess water.
4
Return the sweet potatoes to the pot and use a fork or potato masher to mash in 2 tablespoons of butter until they're smooth.
5
In a separate bowl, whisk together eggs, maple syrup, buttermilk, milk, vanilla extract, cayenne pepper, allspice, and a pinch of salt until you have a smooth, creamy mixture.
6
Gradually add the mashed sweet potatoes to the egg mixture, starting with 2 tablespoons of sweet potato mixture and mixing until all the sweet potatoes are fully incorporated.
7
Transfer the sweet potato mixture into your prepared baking dish and set it aside.
8
In another bowl, mix together pistachios, brown sugar, flour, and 1/4 cup of melted butter until everything is well combined.
9
Use your hands or a fork to crumble the pistachio mixture evenly over the top of the sweet potato mixture.
10
Place the baking dish in the preheated oven and bake until the topping is golden brown and the casserole is set, about 25 to 30 minutes. If you want a slightly darker color, place the dish under the oven's broiler for an additional 5 minutes.
11
Remove the casserole from the oven and let it rest for about 10 minutes before serving.
