Chef John's Italian Steak Pizzaiola
Ingredients
  • 1 pound beef tenderloin steaks, cut into 4 medallions
  • salt and pepper to taste
  • 1 tablespoon olive oil
  • 1 cup sliced fresh mushrooms
  • 2 teaspoons butter
  • 1 pinch salt
  • 1 cup sliced sweet and hot peppers
  • 4 cloves garlic, crushed
  • 1/2 cup white wine
  • 1/4 teaspoon dried oregano
  • 1 cup tomato concasse (see footnote for recipe link)
  • 2 tablespoons chopped fresh oregano
  • 1 teaspoon balsamic vinegar
  • 1 pinch red pepper flakes
  • 1 pinch salt and ground black pepper to taste
Instructions
1
Prepare the steak by sprinkling both sides with salt and black pepper for a flavorful start.
2
Heat a generous amount of olive oil in a large skillet over extremely high heat, allowing it to reach its maximum temperature. Carefully place the steaks into the skillet and cook until they develop a rich brown color on both sides, taking approximately 2 minutes per side. Remove the steaks from the skillet and set them aside on a plate, reserving the remaining oil for later use.
3
Place sliced mushrooms and melted butter into the skillet, seasoning them with a pinch of salt to bring out their natural flavors. Cook and stir the mixture until the mushrooms are tender, slightly softened, and starting to develop a rich brown color, taking around 5 to 6 minutes. Gradually reduce the heat to a medium level; add sliced peppers and cook, stirring occasionally, until they become tender as well, approximately 2 minutes. Introduce minced garlic into the skillet and cook for just 1 minute to preserve its flavor.
4
Add a splash of wine to the skillet, followed by a sprinkle of dried oregano for added depth. Increase the heat to medium-high and cook until most of the wine has evaporated, about 3 minutes.
5
Stir in a mixture of tomato concassé and the mushroom mixture to create a harmonious blend. Allow the tomato to soften, taking around 3 to 4 minutes.
6
Introduce fresh oregano, balsamic vinegar, and red pepper flakes into the skillet; stir everything together to create a balanced flavor profile. Adjust the seasoning with salt and black pepper as needed.
7
Return the steaks to the skillet, accompanied by the mushroom mixture, and cook until they reach your desired level of doneness, taking approximately 4 to 10 minutes.
