- 1/8 teaspoon red pepper flakes
- 1 pinch freshly grated nutmeg

Combine pork, fennel seeds, orange zest, salt, black pepper, Italian seasoning, red pepper flakes, and nutmeg in a bowl. Gently mix the ingredients together with a fork to blend them without over-mixing. Cover and refrigerate for an extended period of time, ideally overnight.

Before proceeding with the recipe, verify the seasonings: Form a small portion of sausage into a patty and cook it briefly in a skillet over medium heat. Allow the patty to cool for 1-2 minutes and then taste it to check if the seasonings are in balance.

Prepare a surface by covering it with plastic wrap. Divide the sausage into 6 equal parts, shape each part into a ball, and then cover it with plastic wrap. Flatten the wrapped sausage balls into patties and discard the used plastic wrap.

Heat a heavy skillet, preferably made of cast iron, over medium-high heat. Cook the sausage patties in the hot skillet for about 3 minutes on each side, or until they are cooked through and browned. Serve the patties immediately.
