Ingredients
- 2 (8 ounce) center-cut salmon fillets, with skin
- 1/4 teaspoon kosher salt
- 1 teaspoon vegetable oil
- 1 clove garlic, sliced
- 1 tablespoon chopped fresh tarragon
- 1 tablespoon chopped fresh flat-leaf parsley
- 3 tablespoons mayonnaise
- 1 teaspoon Dijon mustard
- 1 teaspoon fresh lemon juice
- 1 pinch cayenne pepper
Instructions
1
Prepare the salmon fillets by sprinkling kosher salt evenly over both sides of the fish.
2
Create a barrier on a baking sheet by covering it with aluminum foil and lightly anointing the surface with vegetable oil.
3
Heat the oven's broiler to its highest setting and position the rack approximately 8 inches away from the heat source.
4
Combine garlic, tarragon, and parsley in a blender or mortar and pestle to create a loose, uniform mixture.
5
Blend the mayonnaise, Dijon mustard, lemon juice, and cayenne pepper into a smooth paste with the garlic-herb mixture until well combined.
6
Position the salmon fillets, skin-side-down, on the prepared baking sheet and evenly distribute the herb mixture over the top and sides of each fillet.
7
Bake under the preheated broiler for approximately 5 minutes, or until the salmon is nicely browned.
8
Immediately turn off the broiler and adjust the oven temperature to 350 degrees F (175 degrees C).
9
Continue baking until the internal temperature of the salmon reaches 130 degrees F (55 degrees C) and flakes easily with a fork, taking around 3 to 4 minutes.
