Chef John's Herb-Infused Cottage Fries
Ingredients
  • 4 baking (russet) potatoes, sliced into 3/8-inch thick rounds
  • salt and freshly ground black pepper to taste
  • 1 pinch cayenne pepper, or to taste
  • 1 pinch herbes de provence, or to taste
  • 2 tablespoons olive oil
Instructions
1
Preheat your oven to a high temperature of 425 degrees Fahrenheit, or 220 degrees Celsius. To prevent sticking, cover your baking sheet with a layer of parchment paper or a silicone mat.
2
In a spacious container, merge diced potatoes, a pinch of salt, a few grinds of black pepper, a dash of cayenne pepper, and a sprinkle of herbes de Provence. Drizzle the potatoes with olive oil, ensuring they are evenly coated.
3
Arrange the spud slices in a uniform pattern on the prepared baking sheet.
4
Place the potatoes in the preheated oven and bake for 15 minutes. Rotate each potato slice, then continue baking for an additional 15 minutes.
5
Continue to bake and flip the potatoes until they achieve a golden-brown color, approximately 30 minutes. The potatoes should be crispy on the outside and tender on the inside.
