- 2/3 cup freshly squeezed lemon juice
- 5 tablespoons unsalted butter at room temperature - cut into 1-tablespoon chunks
- 1 1/2 tablespoons freshly grated lemon zest

Fill a saucepan with a substantial amount of water, making sure it's deep enough to cover the bottom. Place the saucepan over medium heat and wait for it to reach a rolling boil, then gradually decrease the intensity of the heat until it reaches a gentle simmer.

Carefully place eggs into a metal bowl; add granulated sugar and freshly squeezed lemon juice. Position the bowl over the saucepan with the simmering water, whisking constantly as the mixture begins to bubble and thicken, becoming smooth and hot. Allow this process to continue for 8-10 minutes.

Remove the bowl from the heat source; whisk in softened butter and grated lemon zest until the butter has melted and is fully incorporated into the lemon curd.

Cover the surface of the curd with plastic wrap to prevent it from forming a skin. Place the bowl in the refrigerator and allow it to chill and set, approximately 1 hour.
