Chef John's Healthy Chocolate Granola
Ingredients
  • 1/3 cup packed brown sugar
  • 1/4 cup maple syrup
  • 2 tablespoons vegetable oil
  • 1/2 teaspoon vanilla extract
  • 3/4 teaspoon kosher salt
  • 1 pinch cayenne pepper
  • 3 tablespoons unsweetened cocoa powder
  • 2 cups rolled oats
  • 3/4 cup chopped almonds
Instructions
1
Preheat your oven to the optimal temperature of 250 degrees Fahrenheit (120 degrees Celsius).
2
Take a large bowl and combine the ingredients of brown sugar, maple syrup, vegetable oil, vanilla extract, salt, cayenne pepper, and cocoa powder. Make sure to whisk these ingredients together until they are thoroughly incorporated.
3
Add the oats and almonds to the bowl, then use a spatula to mix everything together until it is evenly coated.
4
Spread the mixture out in an even layer over a silicone-lined baking sheet, making sure to cover the entire surface.
5
Bake the mixture in your preheated oven for 30 minutes. After this initial baking time, remove the granola from the oven and use a fork to break up any clumps that may have formed, resulting in a smoother texture.
6
Continue baking the granola until it reaches your desired level of crunchiness, which can take anywhere from 30 to 60 minutes more.
7
Once the granola has reached your desired texture, sprinkle a small amount onto a plate. If it makes a clinking sound when moved, you know it is ready to eat.
8
After the granola has cooled to room temperature, turn off your oven and allow it to dry out completely inside the oven.
