Chef John's Green Chili Chicken
Ingredients
  • 3 pounds skinless, boneless chicken thighs
  • kosher salt to taste
  • 1 (24 fluid ounce) bottle tomatillo-based salsa verde
  • 1/2 (4 ounce) can chopped roasted green chiles
  • 3 cloves garlic
  • 1 large jalapeno pepper, seeded and sliced
  • 1/2 cup lightly packed cilantro leaves and stems
  • 1 tablespoon ground cumin
  • 1 teaspoon ground dried chipotle pepper
  • 1/2 teaspoon freshly ground black pepper
  • 3/4 teaspoon dried oregano
  • 1 teaspoon kosher salt, or more to taste
  • 2 (15 ounce) cans white kidney beans, drained and rinsed

Preheat your oven to a high temperature and sprinkle salt evenly onto both sides of the chicken thighs. Place half of the chicken in a hot, nonstick skillet and cook until it develops a nice brown color on both sides, approximately 4 minutes per side. Transfer the chicken to a separate container and reserve it for later use.

Next, sear the remaining chicken in the skillet until it reaches a similar brown color. Allow the chicken to cool down completely before cutting it into smaller, manageable pieces.

In a blender, combine and puree the salsa verde, green chilies, garlic, jalapeno, and cilantro until you achieve a smooth, vibrant green sauce.

Add the chicken pieces back into their original container and combine them with any juices that have accumulated. Introduce the green sauce to the chicken mixture, along with a pinch of cumin, chipotle pepper, black pepper, oregano, and salt.

Clear the blender by rinsing it with a small amount of water and pour its contents back into the pot containing the chicken mixture. Mix everything together, then adjust the heat to a medium-high setting. Bring the mixture to a gentle simmer; gradually decrease the heat to a lower setting and let it cook for about an hour, or until the chicken is tender. Finally, stir in some kidney beans and continue to simmer until the sauce thickens, approximately 15 minutes.
