Ingredients
- 3 cups crushed saltine crackers
- 3/4 cup unsalted butter, melted
- 4 cups shucked small oysters with liquor
- 1/8 teaspoon cayenne pepper
- salt and ground black pepper to taste
- 2 tablespoons chopped fresh Italian flat-leaf parsley
- 1 cup heavy cream

Preheat your oven to a high temperature of 375 degrees Fahrenheit (or 190 degrees Celsius, if that's your preference).

In a bowl, mix together saltine crackers and softened butter until the entire batch is evenly coated with butter.

Place one-third of the saltine mixture onto the bottom of a 9x13-inch rectangular baking dish. Pour half of the oysters, including their liquid, over the saltine mixture. Add a pinch of cayenne pepper, salt, and black pepper to taste.

Repeat the layering process with another one-third of the saltine mixture and the remaining oysters. Again, sprinkle a pinch of cayenne pepper, salt, black pepper, and Italian parsley over the top.

Cover the oysters with the remaining saltine mixture. Drizzle a small amount of cream over the top, allowing it to slowly and evenly spread.

Place the casserole dish in the preheated oven and bake until it's bubbling and nicely browned, taking around 40 to 45 minutes. Remove from the oven and let it rest for 10 minutes before serving.
