Ingredients
- 1/2 cup brewed espresso
- 3 tablespoons Marsala wine, divided
- 2 large eggs, separated
- 2 tablespoons white sugar
- 1 teaspoon white sugar
- 3/4 cup mascarpone cheese
- 1/2 teaspoon vanilla extract
- 1 pinch salt
- 10 ladyfinger cookies, broken in half, or more as needed
- 1 tablespoon cocoa powder
- 1/2 ounce dark chocolate, grated

Combine the espresso and 2 tablespoons of wine in a shallow dish.

Set the mixture aside for now.

In another large bowl, blend together the egg yolks, 2 tablespoons plus 1 teaspoon of sugar, and the remaining 1 tablespoon of wine.

Whisk this mixture over a pot of simmering water until it thickens, becomes pale yellow, and has a creamy texture. This should take about 5 to 6 minutes.

Remove the bowl from the heat source and blend in the mascarpone, vanilla, and salt until everything is perfectly smooth.

In a separate bowl, whip the egg whites until they form stiff peaks.

Make sure to lift your beater or whisk straight up to get the best results.

Gently fold 1/2 of the egg whites into the mascarpone mixture, then add the remaining egg whites.

Spoon 1 heaping serving of the mascarpone mixture into a single-serving glass or cup.

Dip 2 cookie halves briefly in the espresso mixture and turn them 3 to 4 times to coat.

Place these cookie halves at the bottom of the glass on top of the mascarpone.

Fill the glass halfway with the mascarpone mixture, then dip 5 ladyfinger halves in the espresso mixture and place them vertically along the inside of the glass.

Continue adding ladyfinger halves as needed to fit the glass.

Place 2 dipped ladyfinger halves horizontally on top of the mascarpone, then fill the glass to the top with the remaining mixture.

Repeat this process for a second glass.

Cover both glasses with plastic wrap and refrigerate them for at least 8 hours or overnight.

Remove the plastic wrap before serving and dust the tops with cocoa and grated chocolate.
