Ingredients
- 2 large skinless, boneless chicken breast halves
- 1/2 teaspoon kosher salt
- 1 pinch ground black pepper
- 1/2 cup flour
- 1 egg, beaten
- 3/4 cup dry bread crumbs
- 1/2 cup light olive oil for frying, or as needed
- 1/2 cup ricotta cheese
- 1/2 cup shredded sharp white Cheddar cheese
- salt and freshly ground black pepper to taste
- 1/2 teaspoon olive oil
- 2 tablespoons grated Parmigiano-Reggiano cheese for topping
- 1 cup marinara sauce, heated, or more as needed
- 1 tablespoon chopped fresh flat-leaf parsley

Preheat the oven to a high temperature of 500 degrees Fahrenheit, or 260 degrees Celsius. To make things easier, line a baking sheet with aluminum foil beforehand.

Next, take some time to prepare the chicken breasts. Gently tap them with a mallet between two layers of plastic wrap until they're all the same thickness. Place the breasts on a plate and sprinkle one side with kosher salt and black pepper for added flavor. Then, cover the entire surface of each breast with flour to help it stick in place.

Turn the breasts over and repeat the process on the other side, making sure to season with salt, pepper, and flour. Remove any excess flour from the plate and place the breasts back on it.

Now, pour some beaten egg over the breasts to help bind everything together. Cover half of a plate with bread crumbs, then transfer the chicken breasts over to the breadcrumbs. Make sure the crumbs stick up the sides of each breast.

Heat some olive oil in a skillet over medium-high heat, then cook the chicken breasts until they're golden and crispy on both sides. This should take about 2 to 3 minutes per side.

To add some extra flavor, mix together ricotta and Cheddar cheese in a bowl. Add some salt, black pepper, cayenne, and olive oil to the mix, then spread half of it over each breast. Dust with some Parmigiano-Reggiano cheese and drizzle with olive oil.

Place the chicken breasts on a baking sheet lined with aluminum foil, and put it in the oven to bake until the cheese is melted and the chicken is cooked through. This should take about 10 to 12 minutes, or until an instant-read thermometer inserted into the center reads at least 165 degrees Fahrenheit.

Finally, serve the chicken breasts with some warm marinara sauce on a plate. Place the chicken in the center of the plate, and sprinkle with some chopped parsley for added flavor.
