Chef John's Bourbon Carrots
Ingredients
  • 1/2 cup butter
  • 2 pounds carrots, peeled, cut into equal-sized pieces
  • 1/2 teaspoon salt, or more to taste
  • 1/2 cup bourbon whiskey
  • 1/3 cup brown sugar
  • freshly ground black pepper to taste
  • 1 pinch cayenne pepper, or to taste
  • 2 sprigs fresh thyme leaves for garnish

Heat a substantial pan over high heat until it starts to bubble vigorously. Add the carrots and a pinch of salt; cook and stir constantly in the hot butter until the liquid disappears and the carrots start to develop a golden-brown crust around their edges, approximately 5-6 minutes.

Decrease the heat to a low setting and pour in the bourbon with caution. Cook and stir until almost all of the bourbon has evaporated, roughly 2 minutes. Sprinkle a generous amount of brown sugar into the pan; cook and stir until the carrots are almost tender, around 5 minutes more.

Boost the heat to high again and cook until the glaze thickens, a mere 15-30 seconds. Add a few grinds of black pepper and a dash of cayenne pepper to taste. Transfer the carrots to a serving dish and decorate with fresh thyme leaves.
