  • 1 cup extra long grain rice (15 minute)
  • 2 cups frozen mixed vegetables
  • 3 cups chicken stock
  • 1 1/2 cups shredded Cheddar cheese

Heat a moderate amount of oil in a medium-sized cooking vessel over an elevated heat level.

Introduce the remaining ingredients, with the exception of the cheese, into the pan.

Allow the mixture to reach a rolling boil for 1 minute.
