  • 2 teaspoons Italian seasoning
  • 1 teaspoon salt
  • 1 (16 ounce) package ziti pasta
  • 1 (32 ounce) jar spaghetti sauce
  • 1 (15 ounce) can Italian-style diced tomatoes
  • 1/2 cup non-dairy Parmesan cheese substitute
  • 1 (16 ounce) package sliced fresh mozzarella cheese

Begin by preheating your oven to a high temperature of 375 degrees Fahrenheit. Next, take a moment to spray a 3-quart baking dish with cooking spray in order to prevent food from sticking.

Heat a significant amount of oil in a large pan over medium heat, allowing it to warm up before adding the eggplant, zucchini, tomatoes, bell pepper, onion, and garlic. Cook these vegetables in batches, stirring occasionally until they are tender, approximately 10 minutes.

Add Italian seasoning and a pinch of salt to the cooked vegetables, stirring until they are well combined.

Simultaneously, bring a large pot of salted water to a rolling boil. Add the ziti pasta and cook, stirring occasionally, until it is tender yet still retains a bit of firmness to the bite, roughly 11 minutes. Drain and rinse the pasta in cold water.

Mix together spaghetti sauce and diced tomatoes in a medium-sized bowl to create a harmonious blend of flavors.

Layer the ingredients in the prepared casserole dish, starting with 1/3 of the sauce mixture at the bottom. Follow this by adding half of the ziti, half of the vegetable mixture, and so on until all the ingredients have been used.

Cover the dish loosely and bake in the preheated oven until it is bubbly, taking around 25 to 30 minutes.

Remove the dish from the oven and uncover it, before topping it with the remaining mozzarella slices. Return the dish to the oven and bake until the cheese is melted and slightly browned, adding an additional 10 to 15 minutes on top of the initial baking time.
