Cheesy Tortellini Soup
Ingredients
  • 1/4 cup butter
  • 1/2 cup finely chopped onion
  • 3 cloves garlic, minced
  • 1/4 cup all-purpose flour
  • 3 cups low-sodium chicken broth
  • 3 cups chopped broccoli
  • 1 medium carrot, julienned
  • 1 (9 ounce) package cheese tortellini
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/4 teaspoon smoked paprika
  • 1/4 teaspoon turmeric
  • 1/2 cup heavy whipping cream
  • 1 cup shredded Colby cheese
Instructions
1
Heat the butter in a large, heavy-bottomed pot over high heat. Add the sliced onion and cook until it becomes tender and loses its crispiness, approximately 5 minutes. Introduce the minced garlic into the pot and cook for just a moment, allowing its aroma to fill the air, roughly 30 seconds. Sprinkle the flour over the onion-garlic mixture and stir until it is evenly distributed.
2
Gradually pour in the chicken broth, stirring constantly to prevent lumps from forming. Add the broccoli florets, sliced carrots, and cooked tortellini to the pot. Season with a pinch of salt, a few grinds of pepper, a sprinkle of smoked paprika, and a dash of turmeric. Stir everything together and lower the heat to medium-low. Cover the pot with a lid and let it simmer gently until the broccoli is tender and the tortellini are cooked through, roughly 15 minutes.
3
Stir in the heavy cream and shredded cheese until they have melted into a smooth, creamy sauce. Serve hot and enjoy immediately.
