Cheesy Tex-Mex Chicken Casserole
Ingredients
  • 1 (10 ounce) bag nacho cheese-flavored corn chips (such as DoritosĀ®), crushed
  • 1 tablespoon butter
  • 1 small onion, finely chopped
  • 1 (14.5 ounce) can diced tomatoes
  • 1 (10.75 ounce) can condensed cream of chicken soup
  • 1 (10.75 ounce) can cream of mushroom soup
  • 1 (4.5 ounce) can chopped green chiles
  • 1/3 cup milk
  • 2 tablespoons sour cream
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • 2 1/2 cups chopped cooked chicken
  • 1 (8 ounce) package shredded sharp Cheddar cheese
Instructions
1
Begin by preheating the oven to a high temperature of 350 degrees Fahrenheit (175 degrees Celsius). Next, lightly coat a 9x13-inch baking dish with a thin layer of oil or cooking spray. Then, evenly distribute the crushed corn chips over the bottom of the baking dish and press them firmly into place.
2
After that, melt a generous amount of butter in a large skillet over medium-high heat. Continue to cook and stir the sliced onion in the melted butter until it becomes tender, taking approximately 6-7 minutes.
3
Subsequently, combine diced tomatoes, cream of chicken soup, cream of mushroom soup, green chiles, milk, sour cream, chili powder, and cumin in a large mixing bowl. Add cooked chicken to the mixture and stir until everything is well combined.
4
Finally, pour the prepared mixture over the corn chips in the baking dish and top it with a layer of Cheddar cheese. Place the dish in the preheated oven and bake until it is bubbly and the cheese is melted, taking around 55-60 minutes. Remove from the oven after it has stood for 10 minutes before serving.
