Cheesy Taco Casserole

  • 1 1/2 pounds ground beef
  • 1 cup chopped onion
  • 1/2 cup water
  • 1 (1 ounce) package taco seasoning mix
  • 1 (10 ounce) can refried beans
  • 1 (6 ounce) can sliced black olives
  • 1 (4 ounce) can diced green chiles
  • 1/2 cup salsa
  • 15 taco shells, broken up, or more to taste
  • 2 cups shredded Cheddar cheese

Preheat your oven to a temperature of 375 degrees Fahrenheit (or 190 degrees Celsius for those using metric measurements).

Next, spray a 9x13-inch baking pan with cooking spray to prevent food from sticking.

In a skillet, cook ground beef and onions over medium heat until the beef is browned, taking around 7 to 10 minutes; remove excess grease.

Add water and taco seasoning to the skillet, stirring constantly until the mixture thickens, approximately 2 minutes.

Reduce heat to a low setting and combine refried beans, olives, green chiles, and salsa in the skillet.

Continue cooking and stirring until all ingredients are warmed through, around 3 to 4 minutes.

Place half of the broken taco shells in the bottom of your prepared baking dish.

Pour 1/2 of the ground beef mixture over the taco shells in the baking dish.

Sprinkle 1/2 of the Cheddar cheese over the top layer.

Repeat this process once more, adding another layer of taco shells and ground beef mixture on top.
