- 2 ounces shredded Cheddar cheese
- 1/4 cup minced onion
- 2 tablespoons chopped fresh parsley

- 2 eggs, beaten
- 1/4 cup grated Parmesan cheese, divided
- 2 tablespoons butter, diced

Preheat the oven to a high heat setting of 350 degrees Fahrenheit (175 degrees Celsius).

Fill a large container with salted water and bring it to a rolling boil. Add sliced zucchini and cook until it becomes soft, approximately 15 minutes; drain excess water. Remove the flesh of the zucchini to create a hollowed-out shape.

In a separate bowl, blend together the zucchini flesh, bread crumbs, shredded Cheddar cheese, chopped onion, fresh parsley, salt, beaten eggs, and most of the grated Parmesan cheese. Stuff the hollowed-out zucchini with this mixture.

Dot the tops of the stuffed zucchini boats with small pieces of butter and sprinkle with a generous amount of remaining Parmesan cheese.

Bake the stuffed zucchini in the preheated oven for 30 minutes, allowing it to cook thoroughly.
