  • 3 cloves garlic, minced
  • 4 small zucchini, diced
  • 1 fresh poblano chile pepper, seeded and chopped
  • 1 cup frozen whole kernel corn
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1/2 teaspoon salt, or to taste

Preheat a large skillet over medium-high heat, using olive oil as the base. Introduce the onion and garlic into the skillet, then cook them while stirring constantly until they become transparent. Next, add the zucchini and poblano pepper to the skillet and cook them until they become tender. Combine corn and beans in the skillet, stirring constantly to heat through. Finally, season with salt according to your preference.
