Cheesy Spinach Dip
Ingredients
  • 1 tablespoon olive oil, divided
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 2 (10 ounce) packages frozen spinach - thawed, drained, and chopped
  • 1/2 cup milk
  • 6 ounces cream cheese
  • 1 cup shredded mozzarella cheese, divided
  • 1/4 cup shredded Cheddar cheese
  • 2 dashes Worcestershire sauce
  • salt and ground black pepper to taste
Instructions
1
Preheat your oven to a high temperature of 425 degrees Fahrenheit (220 degrees Celsius).
2
Next, take some time to prepare a shallow baking dish that can hold 1.5 quarts of liquid.
3
Using a large cooking vessel, heat up 2 teaspoons of olive oil over medium heat on your stovetop.
4
Add sliced onions and minced garlic to the hot oil, stirring constantly as they cook until they reach a light brown color.
5
This process should take anywhere from 4 to 7 minutes, depending on your skill level and the heat of your stove.
6
Once the onions are cooked, add a handful of fresh spinach leaves to the pot and continue to cook until they reach a hot temperature.
7
After about 5 minutes, remove any excess liquid from the spinach mixture and transfer it to a separate container.
8
In a separate pot, heat up another 2 teaspoons of olive oil over medium heat on your stovetop.
9
Add the milk to this pot and return it to medium heat on your stovetop.
10
Melt a block of cream cheese into the milk, stirring constantly as they combine.
11
Continue to cook and stir the mixture for about 3 minutes, until it reaches your desired consistency.
12
Return the spinach mixture to this pot and add 1/2 cup of shredded mozzarella cheese and a block of cheddar cheese.
13
Stir the mixture until it is well combined, then add a dash of Worcestershire sauce, some salt, and pepper to taste.
14
Transfer the mixture to your prepared baking dish and top it with the remaining 1/2 cup of mozzarella cheese.
15
Place your dish in a preheated oven and bake until it is bubbly and golden brown on top, taking anywhere from 20 to 25 minutes.
