Cheesy Spicy Shrimp Grits
Ingredients
  • 4 cups chicken broth
  • 1 teaspoon salt
  • 1 cup quick-cooking grits
  • 2 tablespoons margarine
  • 1 bunch green onions, chopped
  • 1 green bell pepper, diced
  • 2 cloves garlic, minced
  • 1 pound peeled and deveined small shrimp
  • 1 (10 ounce) can diced tomatoes and green chilies
  • 1 cup shredded Monterey Jack cheese
  • 3/4 cup shredded sharp Cheddar cheese
  • 1/2 teaspoon black pepper
Instructions
1
First, preheat the oven to its highest temperature setting, which is 350 degrees F (175 degrees C).
2
Next, take a moment to prepare the baking dish by coating its interior with a thin layer of grease.
3
Then, combine chicken broth and salt in a large saucepan and bring the mixture to a rolling boil over high heat.
4
After that, add grits to the boiling saucepan and stir them in thoroughly. Return the mixture to a gentle simmer, then gradually decrease the heat to a low setting and let it cook for 20 minutes, stirring constantly throughout this time.
5
Simultaneously, melt margarine in a skillet over medium heat.
6
Add green onions, bell pepper, and garlic to the skillet with the melted margarine and cook until the peppers have become tender, approximately 5 minutes.
7
Add shrimp to the skillet with the vegetables and cook until they start to firm up, a process that should take around 5 minutes.
8
Meanwhile, combine the cooked shrimp mixture with tomatoes, Monterey Jack cheese, 3/4 cup of Cheddar cheese, and black pepper in a bowl.
9
Then, stir this combined mixture into the cooked grits and pour it into the prepared baking dish.
10
Finally, sprinkle a layer of remaining 1/4 cup Cheddar cheese over the top of the baked dish.
11
Place the baking dish in the preheated oven and let it bake until the cheese is bubbly and beginning to brown, a process that should take anywhere from 30 to 45 minutes.
