Cheesy Spaghetti Squash Gratin
Ingredients
  • 1 spaghetti squash, halved and seeded
  • 3 tablespoons light margarine
  • 1 small yellow onion, thinly sliced
  • 1 teaspoon red pepper flakes
  • 1/4 teaspoon garlic powder
  • salt and freshly ground black pepper to taste
  • 3/4 cup fat-free sour cream
  • 1 cup shredded light Cheddar cheese
  • cooking spray
Instructions
1
Place the spaghetti squash in a covered container and add about 1/8 of an inch of moisture. Microwave for the duration of 10 to 12 minutes, or until it reaches your desired level of tenderness. Remove the squash from the microwave and use a utensil to scrape out its interior contents.
2
While the squash is cooking, melt margarine in a medium-sized pan over a moderate heat setting. At this time, cook the onion along with some red pepper flakes, garlic powder, salt, and pepper until the onion has reached a browned state. This process should take anywhere from 5 to 10 minutes.
3
Preheat your oven to a temperature of 375 degrees Fahrenheit (or 190 degrees Celsius). Grease a baking dish with nonstick cooking spray beforehand.
4
Combine the cooked spaghetti squash, onion mixture, sour cream, and half of the Cheddar cheese in a bowl. Transfer this mixture to the prepared baking dish and top it off with the remaining Cheddar cheese.
5
Bake the combined mixture in the preheated oven for 20 to 25 minutes. During the last 2 to 3 minutes of baking, turn on your broiler and cook until the top is golden brown.
