Cheesy Sour Cream Chicken Enchiladas
Ingredients
  • 1 bunch cilantro
  • 1 cup sour cream
  • 2 (7 ounce) cans jalapeno salsa
  • 2 (7 ounce) cans prepared green chile salsa
  • 2 skinless, boneless chicken breast halves, cooked and shredded
  • 1 onion
  • 12 (6 inch) flour tortillas
  • 2 cups shredded Cheddar cheese

To Prepare the Sour Cream Mixture: Combine cilantro, sour cream, jalapeno salsa and half a can of green chile salsa in a blender or food processor. Set it aside momentarily.

To Prepare the Chicken Mixture: In a large container, merge shredded chicken, onion and the remaining half and a half cans of green chile salsa. Mix everything thoroughly.

Preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius).

Warm tortillas in a conventional or microwave oven until they become soft and pliable. Pour just the right amount of the sour cream mixture into a 9x13 inch baking dish to cover its base. Place two generous spoonfuls of the chicken mixture in each tortilla, roll it up and place it seam side down in the baking dish. Pour the remaining sour cream mixture over all and top with shredded cheese.

Cover the dish tightly with aluminum foil and bake at 350 degrees Fahrenheit (175 degrees Celsius) for approximately thirty minutes, or until the dish is heated through and bubbling.
