- 1 (14.5 ounce) package tortilla chips, or to taste
- 2 pounds shredded Monterey Jack cheese
- 1 1/2 pounds large peeled and deveined cooked shrimp, tails removed and shrimp quartered
- 1 cup mayonnaise
- 4 chipotle peppers in adobo sauce, chopped
- 1/2 cup chopped fresh cilantro
- 1/4 cup dried minced onion (such as McCormick® Coarse Grind Blend White and Green Onions)
- 1 1/2 tablespoons ground cumin
- 1/4 teaspoon ground black pepper

Preheat your oven to a high temperature of 400 degrees Fahrenheit (200 degrees Celsius). To make cleanup easier, cover the bottom of a baking sheet with a thin layer of aluminum foil.

Next, arrange tortilla chips in an even layer on the prepared baking sheet. This will provide a solid foundation for your nachos.

Meanwhile, combine shredded Monterey Jack cheese, succulent shrimp, creamy mayonnaise, spicy chipotle peppers in adobo sauce, chopped cilantro, sautéed minced onion, warm cumin, and a pinch of black pepper in a bowl. Mix everything together until you have a uniform blend.

Now, spread the cheese-shrimp mixture evenly over the tortilla chips. This will create a deliciously layered snack.

Place the baking sheet in your preheated oven and bake for 3 minutes. To add a nice brown crust, switch to the broiler and cook the nachos for an additional 3-4 minutes. Finally, let the nachos rest at room temperature for about 2 minutes before serving.
