  • 1 green bell pepper, chopped
  • 1 1/2 cups chopped celery
  • 1 pound fresh mushrooms, sliced
  • 1 zucchini, sliced
  • 1 (16 ounce) can diced tomatoes
  • 1 (15 ounce) can tomato sauce
  • 1 pound cooked shrimp
  • 1 (4 ounce) jar diced pimento peppers, drained
  • 3 teaspoons chili powder

Begin by placing water in a saucepan and bringing it to the boiling point. Introduce rice into the saucepan, stirring gently to combine. Decrease heat levels and cover the saucepan, allowing it to simmer for 20 minutes before setting it aside temporarily.

Concurrently, preheat the oven to a moderate temperature of 300 degrees F (150 degrees C).

In a large cooking vessel or pot, melt butter over medium heat and sauté a medley of vegetables including carrots, onions, bell pepper, celery, mushrooms, and zucchini until they are just tender. Introduce tomatoes and tomato sauce into the pot, stirring constantly to combine. Allow this mixture to cook for 5 minutes, stirring frequently throughout the process.
