Cheesy Scrambled Egg Avocado Bowl
Ingredients
  • 1 (10 inch) soft flour tortilla
  • 2 eggs
  • 1/2 teaspoon milk
  • 1/2 teaspoon butter
  • 1/4 cup shredded Mexican cheese blend, or more to taste
  • 1/2 avocado - peeled, pitted, and diced
  • 1/4 cup salsa, or to taste
  • 1 pinch paprika, or to taste
  • 1 pinch sea salt
Instructions
1
Preheat your oven to a high temperature of 400 degrees Fahrenheit (200 degrees Celsius).
2
Place the tortilla into a pre-formed tortilla shell mold or an oven-safe bowl to give it a desired shape.
3
In a microwave-safe container, combine eggs, milk, and melted butter. Whisk these ingredients together until well combined.
4
Add the Mexican cheese blend to the mixture and stir it in thoroughly.
5
Place the tortilla in the preheated oven and bake until crispy and golden brown, taking around 5 to 7 minutes.
6
Once done, remove the tortilla from the oven and let it cool slightly before transferring it to a serving dish. This process should take about 2 minutes.
7
In the microwave, cook the egg mixture until it is fully set. This may take anywhere from 30 seconds to 1 minute, depending on your microwave's power level.
8
Remove the egg mixture from the microwave and gently stir it with a fork to avoid breaking the eggs.
9
Cook the egg mixture for another 30 seconds, until it is fully set and ready to use.
10
Place the cooked egg mixture into the tortilla bowl.
11
Add sliced avocado, a spoonful of salsa, some paprika, and a pinch of salt on top to give your dish the desired flavor and texture.
