- 2 stalks celery, finely diced

- 2 cloves garlic, minced
- 1 pound bulk plain pork sausage
- 1/2 tablespoon dried sage
- 1 (8 ounce) container cottage cheese
- 8 eggs
- 1/2 cup milk
- 1 teaspoon dried tarragon
- 1/2 teaspoon salt
- 1/4 teaspoon ground black pepper
- 1 (8 ounce) package shredded Cheddar-Monterey Jack cheese blend

Preheat your oven to the optimal temperature of 375 degrees Fahrenheit (or 190 degrees Celsius).

Unroll each pie crust and position them in two 9-inch round baking dishes.

Theat oil in a large skillet over medium heat. Sauté sliced celery, chopped onion, and minced garlic in the hot oil for 1 to 2 minutes. Introduce cooked sausage into the skillet, breaking it apart as you go and browning it until no longer pink; sprinkle dried sage over the mixture to enhance flavor, then continue cooking for an additional 5 to 7 minutes. Remove from heat.

Mix cooked sausage with cottage cheese in a bowl, blending the ingredients until well combined.

Distribute the meat mixture evenly between the two pie crusts.

In a separate bowl, whisk together eggs, milk, dried tarragon, salt, and pepper until smooth. Pour the egg mixture over the meat mixture in each pie crust.
