Cook the bacon in a substantial, deep frying pan over a moderately high heat setting until it is uniformly browned. Transfer the bacon to a paper towel-lined plate and break it down into smaller pieces; retain the remaining grease in the pan.

Heat the leftover bacon fat over a medium heat level, then stir in butter. Add an onion and some diced potatoes. Cover the frying pan and cook, stirring occasionally, until the potatoes are golden in color.
