Cheesy Irish Soda Bread
Ingredients
  • 2 eggs, beaten
  • 1/3 cup grated Parmesan cheese
  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 cup milk, or as needed
Instructions
1
Preheat your oven to the optimal temperature of 400 degrees Fahrenheit, or 200 degrees Celsius. To prevent sticking, cover a baking sheet with a layer of parchment paper.
2
In a separate container, whisk eggs until they become smooth and are set aside for later use. Place the Parmesan cheese into a shallow dish, allowing it to be easily accessible.
3
Mix together flour, salt, and baking soda in a bowl until they are well combined. Gradually add milk into the mixture, adding it several tablespoons at a time until you achieve a soft dough consistency. Transfer the dough onto a well-floured surface, and knead it several times until it comes together into a cohesive mass.
4
Roll the dough out into a rectangular shape, approximately 1/2 inch thick. Cut it into squares of dimensions 2x3 inches. Brush each square with the beaten eggs, and then dip the top of the square into the Parmesan cheese. Place these squares onto the prepared baking sheet.
5
Bake the squares in the preheated oven until they are lightly browned, taking around 10 minutes to achieve this result.
