Cheesy Grits Casserole
Ingredients
  • 2 1/4 cups whole milk
  • 2 1/4 cups water
  • 1 teaspoon salt
  • 1 cup quick-cooking grits
  • 1 (8 ounce) package processed cheese (such as Velveeta®), cubed
  • 1/2 pound sharp Cheddar cheese, cubed
  • 1/4 cup butter
  • 1/8 teaspoon garlic powder
  • 2 eggs, beaten
Instructions
1
Preheat your oven to the desired temperature of 350 degrees Fahrenheit or 175 degrees Celsius.
2
Next, take a butter knife and spread a generous amount of butter onto the bottom and sides of a 9x12-inch baking dish.
3
To make the grits, combine milk, water, and a pinch of salt in a large saucepan over high heat. Bring the mixture to a rolling boil, then gradually pour in the grits while stirring constantly with a spoon. Continue cooking until the mixture thickens, approximately 5 minutes.
4
Once the grits are cooked, add in a blend of processed cheese, sharp Cheddar cheese, softened butter, and a sprinkle of garlic powder. Stir the mixture until the cheese has melted and the flavors have combined, about 2-3 minutes.
5
Allow the grits mixture to cool and thicken further, approximately 15 minutes.
6
Meanwhile, in a separate bowl, whisk together beaten eggs until they're smooth and creamy.
7
Now, gently fold the egg mixture into the cooled grits until well combined. Pour the mixture into the prepared baking dish.
8
Finally, place the baking dish in a preheated oven and bake until the top is lightly golden brown and the grits have set, approximately 45 minutes.
