- 1/2 cup cream cheese, softened
- 1/2 cup chopped green onions, divided
- 1 egg, lightly beaten
- 3 tablespoons butter
- 3 cloves garlic, crushed and chopped, or to taste
- 1/2 teaspoon salt
- 1/2 cup shredded Cheddar cheese

Start by submerging potatoes into a large container filled with salted water. Make sure the water is not too deep, as you want to leave about an inch at the top. Bring this mixture to a rolling boil, then gradually decrease the heat to a lower setting. Allow the potatoes to cook for approximately 20 minutes, or until they are tender enough to be easily pierced with a fork. Remove the potatoes from the water and transfer them back into the same container.

Next, preheat your oven to 375 degrees Fahrenheit. Take a glass baking dish and lightly grease it with butter or cooking spray. This will help prevent the potatoes from sticking to the dish during baking.

In a separate bowl, whisk together milk, softened cream cheese, 1/3 cup of finely chopped green onions, beaten egg, melted butter, minced garlic, and a pinch of salt. Add this mixture to the cooked potatoes and mash everything together until you achieve your desired consistency.

Spoon the potato mixture into the prepared glass baking dish. Sprinkle a generous amount of shredded Cheddar cheese and any remaining chopped green onions on top.
