- 1 small onion, chopped
- 4 cups cubed cooked chicken breast
- 1 (15.25 ounce) can black beans, rinsed and drained
- 1 (15.2 ounce) can corn, drained
- 1 (10.5 ounce) can condensed cream of chicken soup
- 1 (10 ounce) can diced tomatoes and green chiles (such as RO*TEL®), undrained
- 1 (4 ounce) can chopped green chilies
- 1 (4 ounce) package cream cheese
- 1/3 cup chopped fresh cilantro
- 2 cups shredded Cheddar cheese
- 1 (10 ounce) bag chili and cheese flavored corn chips (such as Fritos® Chili Cheese® Corn Chips)

Preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius).

Melt butter in a large saucepan over medium heat. Introduce the onion into the saucepan and cook until it becomes tender, approximately 5 minutes.

Add the chicken, beans, corn, cream of chicken soup, tomatoes, and chiles (including their juice) to the saucepan. Incorporate green chiles and cream cheese into the mixture, then cook until the cream cheese has melted, around 5 minutes.

Distribute one-third of the tortilla chips on the bottom of a 9x13 inch rectangular casserole dish. Place half of the chicken mixture on top of the chips, followed by half of the shredded Cheddar cheese. Repeat this layering process.

Top the second layer with the remaining one-third of tortilla chips and the remaining one-third of Cheddar cheese.

Bake the casserole in the preheated oven until the cheese has melted and is lightly browned, approximately 30 minutes. Remove it from the oven, cover it, and let it rest for 30 minutes to allow it to set before cutting into squares.
