Cheesy Chiles Rellenos Bake
Ingredients
  • 3 (4 ounce) cans mild whole green chiles, drained
  • 2 cups shredded Pepper Jack cheese
  • 9 (8 inch) flour tortillas
  • 1 (19 ounce) can enchilada sauce
  • 1 cup sour cream
  • chopped fresh cilantro

Preheat your oven to a medium-high temperature of 350 degrees F (175 degrees C).

Cut each chile pepper in half lengthwise and carefully extract the seeds. Place 2 halves of the chile pepper alongside approximately 3 1/2 tablespoons of cheese near the outer edge of each tortilla. Roll the tortilla to create a sealed package around the filling. Repeat this process with the remaining tortillas, chiles, and cheese. Arrange the filled tortillas in a seam-side down direction within a greased 9x13 inch baking pan.

In a small container, mix together the enchilada sauce and sour cream using a whisking motion.

Spoon the combined sauce over the filled tortillas in the baking pan.
