Cheesy Chicken Parmesan
Ingredients
  • 2 (15 ounce) cans tomato sauce
  • 1 (6 ounce) can tomato paste
  • 1 tablespoon white sugar
  • 1 teaspoon dried parsley
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1 medium garlic clove, chopped
  • 3 pounds skinless, boneless chicken breast halves
  • 1 cup fine dry bread crumbs
  • 1 pound Cheddar cheese, shredded
  • 1 pound mozzarella cheese, shredded
  • 1 teaspoon garlic salt to taste
  • salt and pepper to taste

Preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius).

To prepare the baking dish, lightly coat it with a thin layer of oil to prevent sticking. The dish should be deep enough to leave at least 2.5 centimeters of space between the chicken and the top.

In a large saucepan over medium heat, combine tomato sauce, tomato paste, sugar, parsley, basil, oregano, and garlic. Stir the ingredients together until they are well incorporated.

Meanwhile, in a large bowl, coat the chicken with bread crumbs until it is completely covered. Arrange the chicken in the prepared baking dish and sprinkle to taste with garlic salt and pepper according to your preference. Top the chicken with half of the shredded Cheddar and mozzarella cheeses. Pour the tomato sauce evenly over the chicken. Reserve half of the remaining Cheddar and mozzarella cheeses, and sprinkle the rest over the chicken and sauce.

Cover the dish with aluminum foil and bake in the preheated oven for approximately 50 minutes, or until the chicken is cooked through. Remove the foil and top with the remaining Cheddar and mozzarella cheeses. Return the dish to the oven, this time without foil, and cook until the cheese on top melts. Remove the pan from the oven and let it sit for five minutes before serving
