- 8 (1/2 inch thick) slices French bread
- 2 cups shredded Cheddar cheese

Preheat a large skillet over medium-high heat, allowing the oil to warm up. Then, carefully place the chicken into the skillet and stir constantly until it reaches a light brown color, approximately 5 minutes have passed.

Next, add the sliced onions and red peppers to the skillet, stirring frequently until they become tender, which should take around 5 minutes. After that, pour in the tomato juice and taco seasoning, stirring everything together to create a cohesive mixture. Continue cooking until the sauce has thickened and the chicken is fully coated, adding an additional 7 minutes to the cooking time.

In preparation for baking, preheat your oven's broiler and adjust the rack to be about 6 inches away from the heat source. To assemble the sandwiches, spread 2 tablespoons of salsa onto each slice of French bread.
