Ingredients
- 1 pound ground beef
- 1 small onion, chopped
- 1 small green bell pepper, chopped
- 1 (28 ounce) can tomato sauce
- 1 (10 ounce) can diced tomatoes with green chile peppers (such as RO*TELĀ®)
- 2 (15 ounce) cans ranch-style beans
- 1 (14.5 ounce) can stewed tomatoes
- 1/4 cup chili powder
- 1 cup corn chips (such as FritosĀ®), or to taste
- 1/2 cup shredded Cheddar cheese, or to taste
Instructions
1
Preheat a large skillet over medium-high heat, allowing it to reach the optimal temperature. Sear and stir beef in the skillet until it reaches a desirable level of browning, typically taking 5 to 7 minutes; remove excess fat from the pan. Combine chopped onion and green bell pepper into ground beef.
2
Combine a mixture of tomato sauce, diced tomatoes with green chile peppers, ranch-style beans, stewed tomatoes, and chili powder into the beef mixture; bring to a rolling boil. Lower heat to medium and let simmer until all flavors have melded together, usually requiring 30 to 45 minutes.
3
Arrange corn chips and beef mixture in serving bowls, followed by a layer of Cheddar cheese on top.
