Cheesy Baked Seafood au Gratin
Ingredients
  • 1 cup butter, divided
  • 1 onion, chopped
  • 1 green bell pepper, chopped
  • 1 cup all-purpose flour, divided
  • 1 pound fresh crabmeat
  • 4 cups water
  • 1 pound fresh shrimp, peeled and deveined
  • 1/2 pound small scallops
  • 1/2 pound flounder fillets
  • 3 cups milk
  • 1 cup shredded sharp Cheddar cheese
  • 1 tablespoon distilled white vinegar
  • 1 teaspoon Worcestershire sauce
  • 1/2 teaspoon salt
  • 1 pinch ground black pepper
  • 1 dash hot pepper sauce
  • 1/2 cup grated Parmesan cheese

Begin by heating 1/2 cup of butter in a large, thick skillet over medium heat. Once melted, add sliced onions and chopped bell peppers to the pan; cook until they become soft and tender.

Next, mix 1/2 cup of flour into the pan with the onions and bell peppers; continue to cook over medium heat for 10 minutes, stirring constantly to prevent burning.

Now, add the crabmeat to the pan and remove it from the heat; set it aside for later use.

In a separate, large pot, bring water to a rolling boil. Add the shrimp, scallops, and flounder; let them simmer in the water for 3 minutes.

Once done, drain the seafood mixture and reserve 1 cup of the cooking liquid for later use. Set the seafood aside to be used in a separate dish.

Preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius). Grease one 9x13-inch baking dish lightly with butter or cooking spray.

In a small saucepan, melt the remaining 1/2 cup of butter over low heat. Add the remaining 1/2 cup of flour to the saucepan and cook, stirring constantly, for just one minute.

Gradually add 1 cup of milk plus the reserved cooking liquid to the saucepan; increase the heat to medium and cook, stirring constantly, until the mixture thickens and becomes bubbly.

Mix in 1/2 cup of Cheddar cheese, 1 tablespoon of vinegar, 1 teaspoon of Worcestershire sauce, salt and pepper to taste, and a few dashes of hot sauce.

Add the cooked seafood mixture to the pan with the cheese sauce and stir until combined.

Press the crabmeat mixture into the bottom of the prepared baking dish to form a crust.

Spoon the seafood mixture over the crabmeat crust and sprinkle with 1/2 cup of Parmesan cheese.

Bake the dish in the preheated oven for 30 minutes, or until it is lightly browned. Serve immediately.
