  • 2 pounds bacon
  • 8 cups shredded sharp Cheddar cheese
  • 4 cups processed cheese sauce
  • 2 cups sour cream
  • 2 cups mayonnaise
  • 2 large onions, finely chopped
  • 1 tablespoon minced chives
  • 2 teaspoons salt
  • 2 teaspoons ground black pepper

Fill a large container with salted water and add the potatoes; bring to a rolling boil. Lower the heat to a moderate level and let it simmer until the potatoes are soft, approximately 20 minutes. Remove from heat and set aside to cool.

Place slices of bacon in a large pan over high heat, frequently turning until they are uniformly browned, around 10 minutes. Remove the cooked bacon from the pan and lay it out on paper towels to drain excess moisture; crumble.

Heat your oven to 325 degrees Fahrenheit (160 degrees Celsius). Lightly coat an 8-quart baking dish with a thin layer of oil or cooking spray.

In another bowl, whisk together Cheddar cheese, cheese sauce, sour cream, mayonnaise, onions, chives, salt, and pepper until well combined.
