Cheesy Bacon Stuffed Mushrooms with Caramelized Onions
Ingredients
  • 3 strips bacon
  • 6 large mushrooms
  • 1 tablespoon butter
  • 1/2 onion, diced
  • 1 clove garlic, sliced
  • cooking spray
  • 3 ounces cream cheese
  • 3 ounces blue cheese
  • 1/3 cup bread crumbs
Instructions
1
Prepare a large skillet by placing bacon strips over medium heat, allowing them to cook until they reach a crispy state. Remove the cooked bacon from the skillet and set it aside, leaving behind the bacon grease in the pan.
2
Meanwhile, prepare the mushrooms by removing their stems and setting them aside, while keeping the caps intact. Chop the mushroom stems into smaller pieces.
3
Next, melt butter in the same skillet used for cooking the bacon. Add the mushroom stems, onion, and garlic to the skillet, stirring frequently as they cook until the onions turn a deep brown color, approximately 15 to 20 minutes.
4
Preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius). Spray a small baking dish with cooking spray for easy cleanup.
5
Once the onion mixture has darkened, transfer it to a blender along with the cooked bacon, cream cheese, blue cheese, and bread crumbs. Blend on low speed until the mixture is roughly chopped and well combined.
6
Stuff each mushroom cap with the cheese mixture, then place them into the prepared baking dish. Bake in the preheated oven until the cheese mixture is bubbly and lightly browned, taking approximately 10 to 15 minutes.
