Ingredients
- 4 large baking potatoes, scrubbed
- 3 tablespoons olive oil
- 1 tablespoon grated Parmesan cheese
- 1/2 teaspoon salt
- 1/4 teaspoon garlic powder
- 1/4 teaspoon ground paprika
- 1/8 teaspoon ground black pepper
- 1 1/2 cups shredded sharp Cheddar cheese
- 8 slices cooked bacon, crumbled
- 1/2 cup sour cream
- 4 stalks green onion, sliced
Instructions
1
Heat the oven to its highest temperature setting, 450 degrees F (230 degrees C).
2
Pierce multiple potatoes several times with a fork and position them on a baking sheet.
3
Cook the potatoes in the preheated oven until they can be easily pierced with a fork, requiring 50 minutes to 1 hour.
4
Take the potatoes out of the oven.
5
Wait until the potatoes have cooled down enough to handle them comfortably.
6
Slice the potatoes lengthwise and carefully remove their flesh, leaving about 1/4-inch of skin intact.
7
Set the removed flesh aside for future use. Place the remaining potato skins back onto the baking sheet.
8
Mix together olive oil, Parmesan cheese, salt, garlic powder, paprika, and pepper in a small bowl; apply the mixture evenly to both sides of the skins.
9
Put the skins back into the oven and cook until they become extremely crispy, taking about 10 minutes.
10
Flip the skins halfway through the baking time.
11
Sprinkle the skins with Cheddar cheese and crispy bacon. Return them to the oven and cook until the cheese is melted, taking about 2 more minutes.
12
Serve the baked skins topped with a dollop of sour cream and chopped green onions.
