Preheat the oven to its highest temperature setting, which is 400 degrees F (200 degrees C). Next, take a stick of butter and apply it evenly to the interior surface of a 1-quart casserole dish.

Place half of the potatoes at the bottom of the prepared casserole dish, and sprinkle a pinch of salt and pepper over them to enhance flavor. Add layers of sliced onions on top, followed by the remaining potatoes, and season once more with salt and pepper.

Take a saucepan of medium size and place it over the middle heat setting. Melt a small amount of butter, about the size of a tablespoon, in the saucepan while stirring occasionally.

Gradually pour in a small amount of flour, about 1 tablespoon, and sprinkle a pinch of salt over it. Continue to cook the mixture in the saucepan while stirring constantly until the raw flour taste has completely disappeared, approximately 1 minute.

Now, slowly pour in milk, about a quarter cup at a time, and whisk the mixture well after each addition to avoid lumps. The gradual addition of milk will help prevent any clumping in the sauce.

Continue to cook, stirring constantly, until the mixture thickens and reaches your desired consistency, which should take around 3 to 5 minutes.

Then, pour the entire contents of a block of cheese into the saucepan and stir continuously until it has melted, about 30 to 60 seconds.

Pour the cheese sauce over the potatoes and cover the casserole dish with aluminum foil to prevent drying out.

Finally, place the covered dish in the preheated oven and bake until the potatoes are tender and the cheese sauce is bubbly, approximately 1 ½ hours.
