Cheesy 3-Cheese Enchiladas
Ingredients
  • 3 cups salsa, divided
  • 1 (8 ounce) package cream cheese, softened
  • 4 stalks green onions, chopped, divided
  • 2 1/2 cups Cheddar cheese, divided
  • 2 1/2 cups shredded Monterey Jack cheese, divided
  • 12 (8 inch) flour tortillas
Instructions
1
First, heat your oven to its highest temperature setting, which is 350 degrees F (175 degrees C).
2
Meanwhile, blend together 2 cups of salsa, a generous amount of cream cheese, and half of the remaining green onions in a large mixing bowl until they are perfectly incorporated.
3
Next, combine 2 cups of Cheddar cheese and 2 cups of Monterey Jack cheese in the same bowl, stirring gently to unite them.
4
Then, place a small amount of the cheese mixture - just enough to cover half the width of each tortilla - in a straight line down the center of each tortilla. Fold the sides over to enclose the filling.
5
After that, position the rolled tortillas seam-side down in a 9x13-inch baking dish.
6
Now, spread the remaining 1 cup of salsa evenly over the tops of the enchiladas.
7
Combine the leftover 1/2 cup of Cheddar cheese and 1/2 cup of Monterey Jack cheese in a separate bowl, mixing them lightly.
8
Finally, sprinkle the cheese mixture over the enchiladas and scatter the remaining green onions on top. Cover the dish with aluminum foil.
9
Place the covered baking dish in the preheated oven and bake until the cheese is melted and bubbly, approximately 20 minutes.
