- 1 cup chopped dill pickles or sweet pickles
- 1 cup shredded Cheddar cheese
- 1 tablespoon prepared yellow mustard, or to taste
- 1 (16 ounce) package egg roll wrappers
- 1 cup vegetable oil for frying

Begin by cooking the ground beef and onion in a skillet over medium heat, stirring constantly for approximately 10 minutes as you break up the beef into small pieces. Once cooked, drain the mixture and transfer it to a bowl.

Next, combine the cooked meat with chopped pickles, shredded cheese, and mustard in the same bowl. Mix these ingredients together until they are well incorporated.

Prepare a baking sheet by lining it with parchment paper. Have a bowl of water nearby to prevent any spills or messes.

Take an egg roll wrapper from the stack and cover the remaining wrappers with a damp paper towel to keep them moist. Place the wrapper on your work surface, corner facing towards you.

Add about 1/4 cup of the filling mixture to the center of the wrapper, then fold the top corner down over the filling. Roll the wrapper tightly into a cylindrical shape, tucking in the corners as you go until the entire wrapper is encased.

Moisten the final corner with a small amount of water, then seal it tightly to prevent any leaks. Place the filled egg rolls on the prepared baking sheet, covered with a slightly damp paper towel.

Heat oil in a deep saucepan or deep fryer until it reaches 365 degrees F (185 degrees C). Using tongs, carefully place 2 or 3 egg rolls into the hot oil at a time. Fry for about 4 or 5 minutes, turning them over once, until they are golden brown.

Remove the cooked egg rolls from the oil with tongs and drain them on paper towels.
