Ingredients
- 1 tablespoon unsalted butter, softened
- 1 1/4 pounds fresh green beans
- freshly ground black pepper to taste
- kosher salt to taste
- 2 teaspoons Dijon mustard, or more to taste
- 1 1/2 cups heavy cream
- 2 ounces Comté cheese, grated
- 2 tablespoons freshly grated Parmigiano-Reggiano cheese
- 2 tablespoons unsalted butter, melted
- 1/3 cup dry bread crumbs
- 1 pinch cayenne pepper, or to taste
Instructions
1
Preheat your oven to a high temperature of 450 degrees Fahrenheit (230 degrees Celsius).
2
To prevent the casserole dish from sticking, generously apply a layer of butter to its interior surface with a tablespoon.
3
Next, fill a large pot with water and add a generous amount of salt. Place the pot over high heat, allowing it to reach a rolling boil.
4
To prepare the beans for cooking, remove their stems by cutting them off with a knife or snapping them loose with your fingers. Cut the beans in half.
5
Add the halved beans to the boiling water, stir them gently, and cook until they are just tender enough. This should take around 5 to 6 minutes, so be sure to check on them frequently to avoid overcooking.
6
Once the beans are cooked, use a strainer to remove them from the boiling water and immediately submerge them in a bowl of cold water. This will help stop the cooking process.
7
Allow the beans to cool down to a comfortable temperature, at which point you can use your hands to gently drain off any excess water and transfer them into the prepared casserole dish.
8
Add a pinch of pepper, salt, and Dijon mustard to the cooled beans, mixing them well until they are evenly coated. Then, pour in a generous amount of cream and sprinkle Comté cheese over the top.
9
Mix together melted butter and bread crumbs in a small bowl until they form a smooth, wet-sand-like consistency. Spoon this mixture over the casserole and sprinkle it generously with bread crumbs, making sure to dust them evenly with a pinch of cayenne.
10
Bake the casserole in the center of your preheated oven until it is golden brown and bubbly, taking around 15 to 20 minutes.
11
Finally, let the casserole cool for 10 minutes before serving.
