  • 1 cup water
  • 1 cup queso fresco, crumbled

Combine the masa harina and water in a bowl, stirring until they form a uniform mixture. Knead the dough thoroughly to ensure it's well combined. Cover the bowl with a lid, allowing the dough to relax for 5-10 minutes.

Divide the dough into eight equal portions, shaping each one into a 2-inch diameter ball. On a lightly dusted surface, flatten each ball into a 6-inch round circle. Sprinkle a generous amount of queso fresco, approximately one-quarter cup, over each round.

Place another tortilla on top of the cheese, pressing the edges together to create a tight seal and prevent the filling from escaping.

Heat an ungreased skillet over medium-high heat. Carefully place one tortilla into the skillet at a time, cooking for approximately 2 minutes on each side, or until the cheese has melted and the tortillas are lightly browned.
