  • 2 teaspoons sea salt, or as needed
  • 1 cup all-purpose flour
  • 3 eggs, beaten
  • 1 cup dried bread crumbs
  • vegetable oil for frying, or as needed
  • 2 cups ricotta cheese
  • 1/2 cup grated Romano cheese
  • 1 tablespoon minced garlic
  • salt and ground black pepper to taste

Preheat your oven to a high temperature of 400 degrees Fahrenheit (200 degrees Celsius).

To prevent the baking dish from sticking, apply a generous amount of butter to its surface and grease it thoroughly.

Cut the eggplant into long, thin slices along its length; discard any slices that have skin attached.

Lay the eggplant slices flat on paper towels and sprinkle both sides liberally with a generous amount of sea salt.

Allow the eggplant slices to sit for 30 minutes, allowing excess moisture to drain; then rinse and gently pat dry with paper towels.

Prepare three shallow bowls by placing flour, eggs, and bread crumbs in them.
