Cheese-Stuffed Arepas

  • 1 cup warm water
  • 1 cup pre-cooked white cornmeal (such as P.A.N.®)
  • 1 cup shredded mozzarella cheese
  • 1 tablespoon butter
  • 1/2 teaspoon salt, or to taste

Combine water and cornmeal in a large bowl, then add mozzarella cheese, butter, and salt. Mix until the ingredients are well incorporated and a smooth dough forms.

Knead the mixture until it becomes pliable and easy to shape.

Divide the dough into portions of a medium orange's size. Shape each portion into a ball and place it between two sheets of plastic wrap.

Flatten the dough using a rolling pin to achieve your desired thickness.

Place each flattened dough ball between two sheets of plastic wrap and press the top edge of a cereal bowl or drinking glass into its surface to create circles.

Carefully remove the plastic wrap and discard any excess dough scraps.

Preheat a griddle with cooking spray over medium-high heat.

Cook the arepas in batches until they turn golden brown, approximately 5 minutes per side.
