Cheese Steak Dip
Ingredients
  • 1 pound beef top sirloin steaks
  • salt and freshly ground black pepper to taste
  • 1 tablespoon olive oil
  • 1 yellow onion, diced
  • 1 tablespoon butter
  • 1 red bell pepper
  • 1 green bell pepper
  • 1/2 cup pepperoncini peppers
  • 7 pickled red peppers (such as Peppadew®)
  • 3 jalapeno peppers
  • 2 (8 ounce) packages cream cheese, softened
  • 1/2 pound provolone cheese
  • 1/2 teaspoon Worcestershire sauce
  • 1 pinch cayenne pepper

Cut the steak into substantial portions. Sprinkle a liberal amount of salt and pepper on both sides of the steak pieces.

Heat a generous quantity of olive oil in a pan over extremely high heat until it starts to smoke. Add the steak slices and sear until their bottoms are a deep brown color, approximately 3 to 4 minutes. Flip the steak over and reduce the heat to a medium level. Cook until the juices start to appear on the surface, another 3 to 4 minutes more. Transfer the steak to a bowl to let it cool down.

Add diced onion, a small amount of salt, and butter to the remaining meat juices in the pan. Cook and stir over a medium heat, scraping up any browned bits that have accumulated, until the onions start to soften and become translucent, around 5 to 7 minutes.

Dice up a variety of colorful peppers - red bell pepper, green bell pepper, pepperoncini, pickled red peppers, and jalapenos - until you have a total of 1 1/2 to 2 cups. Add the onions; cook and stir until they start to soften, about 5 minutes.

Preheat your oven to a high temperature of 400 degrees F (200 degrees C).

Cut the steak into small, bite-sized pieces. Place them back into the bowl with the accumulated meat juices. Add the onion-pepper mixture and a generous amount of cream cheese. Grate in some provolone cheese, saving a little for the top layer. Drizzle in a small amount of Worcestershire sauce and sprinkle in some cayenne pepper. Mix the dip thoroughly.

Transfer half of the dip into a small baking dish. Smooth the top with a fork to create an even surface. Place the baking dish on top of a sheet pan. Sprinkle the remaining provolone cheese on top. Save the other half to bake fresh for your guests.

Bake in the preheated oven until the dip is bubbling and heated through, approximately 20 to 25 minutes. Broil until the top is browned, about 1 minute more. Repeat with the second batch of dip.
