  • 1 tablespoon all-purpose flour
  • 1/4 teaspoon salt
  • 1/2 teaspoon vanilla extract
  • 1 teaspoon lemon zest
  • 2 ounces cream cheese, softened
  • 1/3 cup shredded Cheddar cheese
  • 1 pinch salt

Preheat your oven to the high heat setting of 400 degrees Fahrenheit (200 degrees Celsius).

Next, take a stick of butter and rub it all over the bottom and up the sides of two 5 1/2-ounce ramekins. Then, sprinkle some sugar into the butter and give the ramekins a quick spin to coat them evenly. After that, pour most of the sugar back into its container and move on.

Now, separate your eggs into two separate bowls. Add a generous amount of sugar, flour, 1/4 teaspoon of salt, vanilla extract, lemon zest, cream cheese, and Cheddar cheese to the yolks. Using a spatula, mix everything together until the sugar and flour have completely vanished.

In a separate bowl, sprinkle a pinch of salt over some room-temperature egg whites. Then, use a whisk to beat them until they form soft peaks that hold their shape but aren't stiff or dry. After that, gently stir and fold 1/2 of the egg whites into the souffle base until everything is well combined. Finally, gently fold in the rest of the egg whites into the batter.

Fill your ramekins up to the top with the batter, making sure not to spill a single drop.

Finally, bake your souffles in the preheated oven for about 12 minutes, or until they're puffed up and nicely browned. Then, serve them immediately.
