Cheese Pão de Queijo
Ingredients
  • 1/2 cup olive oil or butter
  • 1/3 cup water
  • 1/3 cup milk or soy milk
  • 1 teaspoon salt
  • 2 cups tapioca flour
  • 2 teaspoons minced garlic
  • 2/3 cup freshly grated Parmesan cheese
  • 2 beaten eggs

Preheat your oven to the optimal temperature of 375 degrees Fahrenheit (or 190 degrees Celsius).

In a large saucepan, combine olive oil, water, milk, and salt. Place the saucepan over high heat and bring the mixture to a rolling boil. As soon as it reaches this point, remove the saucepan from the heat source.

In a separate container, whisk together tapioca flour and garlic until you achieve a smooth consistency. Allow this mixture to sit for 10 to 15 minutes, allowing the flavors to meld together.

Meanwhile, combine grated cheese and eggs in a separate bowl. Gradually add the tapioca mixture to this bowl, stirring until everything is well incorporated. You may notice that the dough has a chunky texture, similar to cottage cheese.

Using your hands or a spoon, shape the dough into small balls, approximately 1/4 cup in size. Place these balls onto a baking sheet that has been lightly coated with cooking spray.

Place the baking sheet in the preheated oven and bake until the tops of the dough balls are lightly browned, taking around 15 to 20 minutes.
